Now that the motor is about to be buttoned up (for now). I'm setting my sights on pulling the 2:93's that are in the car now. What would you suggest for my wagon. Stock-ish 350, DD, occasional >2000 lbs towing. I had 3.23's before I swapped the rear and I felt like that drove pretty good and still got good miles. Actually got better mileage with the 3.23's than I do with the 2.93's...

I would go back to the 3.23, or the 3.42.

3.73 may be too much for you if mileage is important.

Im taching around 2200rpm @75mph. The gears feel nice but for highway travelling with a leadfoot.... Twisted Evil it sucks up some petrol.

Short answer? Keep the 3.23's.

Not short answer? Keep the 3.23's. The 3.42's aren't enough of a difference to make $en$e. So that would mean you'd want 3.73's. And if you want those, you should really go 4.10's. Yes, even automatic. But if you go that way, what's your converter stall at? And if you're going higher stall converter, why not go more cam? So you'll need some more head work. And tbi doesn't really flow up high, so then it's time to...

3.23's.

They're free. You like them.
